Pork with power

Advantages: Tastes yummy, quick and easy
Disadvantages: Only if you dont like mustard

Its food again, but we love food dont we. Pork chops with mustard, yummy fancy the thought of it. What are you waiting for lets get cooking YOU WILL NEED 4pork chops salt pepper 25g/1oz butter 1 tablespoon wine vinegar or orange juice 3 tablespoons stock or water 1 tablespoons french mustard 150ml/1 quarter pint single cream of top of milk Okay, rub the chops with the salt and pepper. Melt the butter in a frying pan and then fry the chops until they are browned on both sides and cooked through. Transfer then to a warmed plate and keep warm. Poor off all but the 2 tablespoons of the juices from the pan. Stir in the vinegar or orange juice and stock or water and bring to the boil. Simmer untill reduced slightly, then remove from the heat and stir in the mustard followed by the cream. Finally pour over ...

Pork & Apricot Casserole

Advantages: Reasonably economical, easy to cook, not too much washing-up, tasty, nutritious
Disadvantages: None unless you don't like a combination of sweet and savoury

Pork can be very lean, very lovely, and not a bad thing for dieters to resort to when they would like to have a meat treat. This recipe came about by accident one day when a tin of tomatoes had the wrong label attached, and I was astonished to see apricots inside when I opened it. Always being one who likes to experiment, I used the apricots in what originally was going to be barbecued spare rib chops, and I made a pork and apricot casserole instead. It sounds initially as if the ingredients used in this dish wouldn't compliment one another, but why not try it and see for yourself, as it's delicious, and it is incredibly easy to make.
